Eli Hyman

4th Generation Owner

The daily running of the business is something that Eli thoroughly enjoys. He likes talking to new & old patrons, learning new things from them and educating others about Charleston and it’s history. Many of our loyal “Raving Fans” have moved on to become close friends of Eli’s. Eli strives to teach his staff the importance of positive attitude and hard work and how it can & will alter our lives for the better. He takes this mission in life very seriously.

Victor Hyman

5th Generation Owner

Victor Hyman represents the fifth generation of Hymans to carry on the legacy at this historic Charleston location. His roots in the restaurant run deep—at just six years old, he could be found alongside his father, handing out hushpuppies, boiled peanuts, and samples of She-Crab soup to guests. Over the years, he worked his way through various roles within in the restaurant, gaining a comprehensive understanding of its day-to-day operations and long-standing culture of hospitality.

After graduating from the College of Charleston and serving in the Israeli Defense Forces, Victor returned in 2021— stepping into a leadership role as partner and owner alongside Eli with a clear vision for the future of Hyman’s Seafood.

Working side by side with his father, Eli, Victor blends tradition with a fresh perspective, focusing on operational excellence and delivering unforgettable dining experiences. His attention to detail, commitment to quality, and passion for people drive him to ensure every guest leaves full, happy, and eager to return.

As a Charleston native, Victor is proud to help steward a beloved institution that continues to serve both locals and visitors, carrying the Hyman family name forward for generations to come.

Tobias Hyman

5th Generation Owner

Tobias was raised in the family business, spending his early years working as a runner and server at Hyman’s. After graduating high school, he attended The Citadel and subsequently served in the U.S. Coast Guard for four years. Following his military service, he worked in law enforcement for six and a half years. In June 2024, Tobias returned to the family business in an owner capacity, bringing with him a wealth of leadership experience, a strong work ethic, and a deep commitment to continuing the Hyman legacy in Charleston.

Terrance Taylor

Kitchen Manager

Terrance joined the Hyman’s Team in 2011 as a Bus Boy / Dish Washer.  Over the years thru hard work and dedication, Terrance worked his way up to one of the Lead Cooks before being promoted to Kitchen Manager in 2021.  Terrance has a passion for excellent food and team member satisfaction.

Edmond Floyd

Line Cook

Edmond has been here since the beginning of Hyman’s Seafood. He started with Eli Hyman in 1986!! He is a leader in the kitchen and the most valuable kitchen employee year after year.
